The owners of Muddy Fork Farm hired us to come out to their CSA farm near Bloomington IN to build a commercial wood fired bread oven so that they could start supplying their CSA clients and farmers market clients with breads and granola.  The oven has 9″ of mass and ~12″ of insulation.  We designed 3 sets of 36″ doors for this oven.  A counterbalanced peel door (design idea came from Alan Scotts oven site), an inner insulated blast door (this door holds in the heat after the fire is out), and the outer insulated blast door to be used while firing the oven in order to keep the heat out of the bakery during the warmer summer months.
